Red Meat Production Up

Commercial red meat production for the United States totaled 3.67 billion pounds during September. This production was up 8 percent from the previous year.

September 1997 contained 22 weekdays (including one holiday) and four Saturdays. September 1996 contained 21 weekdays (including one holiday) and four Saturdays.

Beef Production, at 2.13 billion pounds, was up 10 percent from the previous year. Cattle slaughter totaled 2.97 million head, up 8 percent from a year earlier. The average live weight was up 14 pounds from the previous year, at 1,193 pounds.

Veal production totaled 28.0 million pounds, down 11 percent from a year earlier. Calf slaughter totaled 136,400 head, down 9 percent from the previous year. The average live weight was down 3 pounds to 334 pounds.

Pork production, at 1.49 billion pounds, was up 6 percent from the previous year. Hog kill totaled 8.02 million head, up 4 percent from a year earlier. The average live weight was up 4 pounds from the previous year at 254 pounds.

Lamb and mutton production totaled 21.0 million pounds, up 4 percent from a year earlier. Sheep slaughter totaled 322,800 head, 1 percent below the previous year. The average live weight was up 7 pounds to 129 pounds.

January-September red meat production was 32.1 billion pounds, down 1 percent from the comparable figure a year earlier. Accumulated beef production was down 1 percent, veal was down 10 percent, pork was down 1 percent, and lamb and mutton was down 3 percent.
