Red Meat Production Down


Commercial red meat production for the United States totaled 3.28 billion pounds during February. This production was down 7 percent from the previous year.


February 1997 contained 20 weekdays (including one holiday) and four Saturdays. February 1996 contained 21 weekdays (including one holiday) and four Saturdays.


Beef production, at 1.92 billion pounds, was down 6 percent from the previous year. Cattle slaughter totaled 2.80 million head, down 4 percent from a year earlier. The average live weight was down 14 pounds from the previous year, at 1,162 pounds. Veal production totaled 27.0 million pounds, down 11 percent from a year earlier. Calf slaughter totaled 125,700 head, 12 percent below a year earlier. The average live weight was up 4 pounds to 348 pounds.


Pork production, at 1.31 billion pounds, was down 8 percent from the previous year. Hog kill totaled 6.97 million head, 9 percent below a year earlier. The average live weight up 2 pounds from the previous year at 256 pounds.


Lamb and mutton production totaled 21.0 million pounds, down 10 percent from a year earlier and equaling the record low for February set in 1979. Sheep slaughter totaled 327,400 head, down 10 percent from a year ago. The average live weight was up 3 pounds to 132 pounds.


January-February red meat production was 7.01 billion pounds, down 5 percent from the comparable period a year earlier. Accumulated beef production was down 3 percent, veal was down 5 percent, pork was down 7 percent, and lamb and mutton was down 12 percent.
