Red Meat, Beef, And Pork
Production Set Record Highs
Commercial red meat production for the United States totaled 4.01 billion pounds, up 5 percent from the previous record high for October set in 1996. October 1996 and 1997 both contained 23 weekdays (including one holiday) and four Saturdays.
Beef production, at 2.30 billion pounds, was up 6 percent from the previous year and up 1 percent from the previous high for October set in 1975. Cattle slaughter totaled 3.23 million head, up 2 percent from a year earlier. The average live weight was up 22 pounds from the previous year, at 1,195 pounds.
Veal production totaled 28.0 million pounds, down 16 percent from a year earlier. Calf slaughter totaled 140,800 head, down 15 percent from the previous year. The average live weight was down 5 pounds to 333 pounds.
Pork production, at 1.65 billion pounds, was up 4 percent from the previous year and up 1 percent from the previous record high for October set in 1994. Hog kill totaled 8.78 million head, up 2 percent from a year earlier. The average live weight was up 2 pounds from the previous year at 257 pounds.
Lamb and mutton production totaled 22.0 million pounds, down 7 percent from a year earlier and equaling the record low for October set in 1995. Sheep slaughter totaled 335,400 head, 11 percent below the previous year. The average live weight was up 7 pounds to 132 pounds.
January- October red meat production was 36.1 billion pounds, down 1 percent from the comparable total a year earlier. Accumulated beef production was just below last year's figure, veal was down 11 percent, pork was down 1 percent, and lamb and mutton was down 4 percent.
